Ingredients

500 gms Samba Rice

4 1/2 cups Stock or Coconut Milk

2 Cloves

2 inch piece Cinnamon

4 Cardamoms

100 grms Red Onions or 2 Bombay Onions (sliced)

3″ piece Ramp

1 tsp . Ginger and Garlic paste

100 gms Butter Oil

Salt

10 Cadju nuts

50 Sims Sultanas

Saffron or yellow coloring

Method

Clean, wash and drain the rice. Heat the ghee and temper onions, rampe, then the ginger garlic paste. Add the rice along with the spices and salt. Fry for a few minutes. Add the milk or stock, coloring and cook till the liquid is absorbed and the rice is boiled. If it is hard you may add a cup of hot water and allow it simmer on low heat. Garnish with fried cadju and

sultanas.

Knorr Chef’s tip the stock can be made of 3 no of Knorr cubes with 4 1/2 cups of water.
