Ingredients

1kg Meat

1 1/2 tbs ‘ Cumin Seeds (Suduru)

1 1/2 tbs Dried Chillie Pieces

1 1/2 tbs Coriander Seeds

1 tsp Sweet Cumin Seeds (Madam) 1 inch piece Cinnamon

5 cloves Garlic

A few pieces Rampe

50 gms Onions

50 gms Tamarind

2 5 pieces Aromatic Ginger (Inguru Piyali)

5 pods Cardamoms

2 inch piece Ginger

A few Sprigs Curry Leaves

2 inch piece Lemon Grass

1 tsp Sugar

Sait to taste

Method

 1. Wash and cut meat into cubes. Mix the

meat with all the ingredients coarsely pounded. Add the tamarind juice squeezed in salt water. Rub the mixture well into the meat. It is a prerequisite that the meat be marinated for at least 2 -3 hours. Thread the marinated meat on skewers and place over a charcoal lire turning the sate frequently until they are done. It can be

grilled in an oven or barbecued. It can be served with peanut sauce.

2. You may add half table spoon of on and cook in slow fire for one hour until meat is
tender.
